N-dimensional planes

I'm not quite sure if I understood your question correctly (maybe you want to write it more comprehensively).

Do you want a matrix with n dimensional planes? This you can achieve by creating the matrix header properly, see http://docs.opencv.org/modules/core/doc/basic_structures.html#mat second bullett.
