Surface mapping using single lens video camera

I am trying to solve a problem involving filling mass (kvarts stone) into a silo.

The silo is fed from a moving conveyor belt running on one axis, through the center, above the silo. I want to minimize the drop height (from conveyor to top/peak of the mass) to minimize damage to the kvarts (which is very porous). Today there is installed a standard single lens 1080p color surveillance camera with the optimum conveyor position determined manually by an operator.

Do you know if there is the possibility to extract the coordinates of the mass peaks through 2d video? Or can it be realized by using more cameras?

Silo dimensions: D20xW20xH30m, mass height ~35m determined by angle of repose.
