How to do this water detection (or what is it)?

I know it is not very pro, but I have found on the web this, and I am wondering has anyone done this? Any suggestions how to do it? I do not think it is based on background subtraction...

do you want some kind of segmentation, though ? like isolating the water from the rest of the image ?

watershed or grabcut could help.

you would need more than one image as input for that

I know, but what do you think it is, background subtraction, or some kind of segmentation based on colours or something like this?
