How to associate a Mat color value to an int/float value?

I'm trying to create a color range module where if the average color is of a particular value, then it would output a specific value. I'm trying to do this on a Thermal image, where if the average color falls between blue and red, then it would be of a certain associative temperature. I've tried doing this, but it gets too complicated too fast. And I have searched about it, to no avail.

Any help on how would I implement this?

Note: How am I going to do this in Code, since haven't got a faintest idea on what was said when people last replied here, and I'm still learning on how to do things here.

Yeah, I know. And I'm really sorry about that. Speaking of which, can anyone help me in this regard? The last got who answered just told me on how do I go about the problem, when I already knew about it. I just needed to know as to how do I implement it in code.
