hair recognition

Hello folks

I have a task: to track a person in a restaurant from the door to the table. My idea is to use two ceiling-mounted cameras, one is placed above the door and takes a photo of hair/bald head/hat etc. And the Other is placed above the table.

So my question is how to compare the two photos of hair, is it possible at all?

I'm very new to computer vision, forgive me if my question is absurd. I'll appreciate if some one points me to the right direction.
