Looks like currently only BGR, Gray and JPEG formats are supported: https://github.com/opencv/opencv/blob/212f0fb5093ff8353cce602084d60225061f79f1/modules/videoio/src/cap_gstreamer.cpp#L1620-L1638 But you can try to add another one.
